It feels like fall has come a little early here in Georgia this year. The mornings are cooler, the evenings are crisp, and thereās just something in the air that makes you want to slow down, light a candle, and lean into the cozy season ahead. With the cool weather settling in, my mind immediately goes to all things autumnāpumpkins on the porch, football weekends, and of course, gathering friends and family around the table for good food.
While browsing through Walmart recently, I stumbled upon the cutest pumpkin-shaped casserole dish, and I knew it had to come home with me. Itās one of those pieces that instantly sparks inspiration. A Fall Recipe Favorite: Cheesy Spinach & Artichoke Dip š
This dip is always a crowd-pleaser and looks extra charming when served in a festive pumpkin casserole dish.
Ingredients:
1 (10 oz) package frozen spinach, thawed and drained 1 (14 oz) can artichoke hearts, drained and chopped 1 cup cream cheese, softened 1 cup sour cream 1 cup shredded mozzarella ½ cup grated Parmesan 2 cloves garlic, minced Salt & pepper to taste
Instructions:
Preheat oven to 375°F. In a large bowl, mix together cream cheese, sour cream, mozzarella, Parmesan, and garlic until smooth. Stir in the spinach and artichokes, then season with salt and pepper. Spread into a casserole dish (pumpkin-shaped, of course!) and bake for 25ā30 minutes until bubbly and golden on top. Serve warm with tortilla chips, toasted baguette slices, or fresh veggies.
