  • I wanted to continue my series in entertaining, but the news has been too sad lately to post. I feel things deeply and hate the unnecessary violence and loss of life that has happened recently to innocent people. I am sad at what our country has become and often wonder if it’s just the USA? I hate the political division, the inability to agree to disagree. I try and keep my political elicit to myself because when I was younger, I remember being told not to talk about religion and politics. Social media has now made it the norm and has further divided the country and is inciting violence. I have a friend who no longer wants to be in our friend group because she thinks differently than we do. I have seen families divided over it, and I just refuse to fuel the fire by speaking about it anymore. But I will speak about unnecessary violence and mental health. I do believe mental health issues are a huge epidemic in our country, and the lack of available treatment that is affordable and accessible is an epidemic. No one that is mentally stable is going to kill another human being. If we could fix the mental health issues, we wouldn’t have the school shootings, stabbings, bombings, etc. I don’t know the right answers, but for now, I am just sad and bracing for the next horrible incident because you know there is always another tragedy right around the corner.

    2 Ib Velvetta

    8 oz Pepper Jack Cheese

    1 Block Cream Cheese

    & 3 JalapeƱos, diced no seeds

    1/2 C Flame Roasted Green Chile

    2 cans of Rotel

    1-2 T of a dry BBQ rub

    Dash of cumin

    1/2 C of heavy cream or a can of cream of chicken soup

    Low for 2 – 3 hrs, High for 1 – 2 hrs, stirring every 20 min or so

    Is amazing to give you queso that extra flavor they you just can’t get with a crockpot. You can even convert it to be a charcoal grill. I love things with a dual purpose.
